Ingredients

Crust and Crumble Topping

  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1/2 teaspoon salt (or to taste)

Strawberry Filling

  • 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray it with cooking spray for easy cleanup. Set aside.
  2. Melt Butter: In a large, microwave-safe bowl, melt the butter by heating approximately 1 minute on high power.
  3. Make Crust Mixture: Add the flour, oats, granulated sugar, brown sugar, and salt to the melted butter. Stir thoroughly until the mixture becomes dry and sandy with some larger crumble pieces.
  4. Reserve Crumble Topping: Remove about 1 heaping cup of the mixture and set it aside for the crumble topping later.
  5. Form Crust: Transfer the remaining mixture into the prepared pan. Using a spatula or your fingers, press the mixture firmly and evenly to create a smooth, flat crust. Set aside.
  6. Prepare Strawberry Filling: In the same large mixing bowl, combine the chopped strawberries, granulated sugar, lemon juice, and cornstarch. Toss gently to mix. Some sugar may remain undissolved but will liquefy during baking.
  7. Assemble Bars: Spread the strawberry filling evenly over the crust in the pan.
  8. Add Crumble Topping: Squeeze the reserved crumble mixture in your palm to encourage larger pieces, then evenly sprinkle it over the strawberry layer.
  9. Bake: Bake in the preheated oven for approximately 50 minutes, or until the edges are set, the center is just set, and the crumble topping is very pale golden. The strawberry filling should be bubbling around the edges. If strawberries are very juicy, baking time may extend up to 55 minutes. Check by appearance and bubbling rather than strictly timing.
  10. Cool and Serve: Remove the pan from the oven and place it on a wire rack. Allow the bars to cool completely for at least 1 hour before slicing. Cutting too early may cause the bars to be messy and fall apart.
