A light and creamy strawberry mousse that blends the sweetness of fresh strawberries with smooth cream cheese or coconut cream. This easy-to-make dessert requires minimal ingredients and time, perfect for a refreshing treat that is ready in just minutes and served chilled.

Ingredients

Base Ingredients

  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt (or additional cream cheese or coconut cream)
  • 1 cup powdered sugar (or sugar free alternative)

Fruit

  • 5 medium size strawberries

Optional Flavoring

  • 1/4 tsp vanilla bean paste

Instructions

  1. Prepare Cream or Cheese: If using cream cheese, allow it to come to room temperature for easier blending. If using coconut cream, open the can and ensure the contents are thick and creamy; discard if it’s hard or flaky as it won’t work well for mousse.
  2. Prepare Strawberries: Remove the stems from the strawberries, then blend or mash them until pureed to create a smooth base for the mousse.
  3. Combine Ingredients: Add the cream cheese or coconut cream, yogurt, powdered sugar, and vanilla bean paste (if using) to the pureed strawberries. Blend using a food processor, blender, or hand mixer until the mixture is completely smooth and well combined.
  4. Chill Mousse: Transfer the mousse into serving dishes and refrigerate. The mousse will thicken significantly as it chills, enhancing its creamy texture and flavor. Serve cold for the best taste.

Notes

  • Using room temperature cream cheese ensures a smooth blend without lumps.
  • Coconut cream should be thick enough to mimic cream cheese texture for a dairy-free alternative.
  • For a sugar-free dessert, substitute powdered sugar with a suitable sugar-free alternative.
  • Vanilla bean paste is optional but adds a nice depth of flavor.
  • Refrigerate for at least one hour to achieve the ideal mousse consistency.
  • Fresh strawberries work best, but frozen can be used if thawed and drained properly.
