Ingredients

Bar Base

  • 1/2 cup butter (softened, salted or unsalted)

  • 1 & 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup shredded coconut (unsweetened, plus extra for topping)
  • 1/3 cup white chocolate chips (mini if possible)

Lime Frosting

  • 1/2 cup butter (at room temperature)
  • 1 & 1/2 cup powdered sugar
  • 1/2 tsp lime extract
  • 2 tbsp lime juice
  • 1 tbsp heavy cream (or milk)
  • lime green food coloring (or mix of yellow and green)

Topping

  • 2 tbsp white chocolate (melted, for drizzling)
  • extra shredded coconut (for sprinkling)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, ensuring some overhang for easy removal later.
  2. Cream Butter and Sugar: In a mixing bowl, beat together the softened butter and brown sugar until the mixture is creamy and well combined.
  3. Add Wet Ingredients: Add the egg, vanilla extract, and coconut extract to the creamed mixture. Mix thoroughly until combined.
  4. Incorporate Dry Ingredients: Gently fold in the flour, baking powder, salt, and shredded unsweetened coconut just until the flour disappears. Then, fold in the white chocolate chips evenly.
  5. Bake the Bars: Spread the batter evenly onto the prepared baking pan. Bake for 15-16 minutes, or until the edges are lightly golden and a toothpick inserted comes out clean.
