Delight in these festive St. Patrick’s Day Caramel Pretzel Bites featuring buttery snap pretzels sandwiched with gooey Rolo candies, coated in vibrant green and white candy melts, and topped with colorful sprinkles for a perfect balance of salty, sweet, and crunchy flavors.

Ingredients

Ingredients

  • 80 butter snap pretzels
  • 40 Rolo candies
  • 12 oz bright white candy melts
  • 12 oz green candy melts
  • St. Patrick’s Day sprinkles

Instructions

  1. Prepare Pretzels and Rolo Layer: Place a sheet of parchment paper over a cookie sheet. Lay 40 butter snap pretzels flat on the cookie sheet then top each pretzel with a Rolo candy.
  2. Soften the Rolo Candies: Preheat your oven to 250°F (120°C). Place the cookie sheet with the pretzel and Rolo arrangement in the oven for 3 minutes to soften the candy slightly, making it easier to sandwich.
  3. Add Second Pretzel Layer: Remove the pan from the oven and immediately cover each softened Rolo candy with another butter snap pretzel, creating a sandwich. Place the assembled pretzel bites into the refrigerator to chill until completely firm.
  4. Melt Candy Coatings: Following package directions, melt the white candy melts and green candy melts separately until smooth and ready for dipping.
  5. Dip Pretzel Bites in Candy Melts: Dip each pretzel bite halfway into the melted candy melts. For a thicker coating, dip two to three times allowing the coating to set slightly between dips. Place the coated bites back on the parchment paper.
  6. Decorate and Final Chill: Immediately add St. Patrick’s Day sprinkles to the dipped pretzel bites before the coating sets. Repeat the dipping and sprinkling steps with remaining pretzel bites. Allow all to cool completely until the candy coating hardens.
  7. Serve and Enjoy: Once fully set, serve your festive caramel pretzel bites at your St. Patrick’s Day celebration or store in an airtight container for up to a week.

Notes

  • Use parchment paper or a silicone mat to prevent sticking during cooling.
  • Ensure the oven temperature stays at 250°F to avoid melting the pretzels.
  • The candy melts can be melted in a microwave or double boiler according to package instructions.
  • For even coating layers, allow the first dip to set slightly before dipping again.
  • Store pretzel bites in an airtight container at room temperature or in the fridge for up to one week.
  • You can substitute the candy melts with any seasonal colors or chocolate melts for variation.
