Ingredients

For the Casserole:

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)

For the Topping:

  • 1/2 cup breadcrumbs

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté onion and garlic: In a skillet over medium heat, sauté onion and garlic until soft (about 3 mins). Add spinach and cook until wilted (about 2 mins). Drain excess liquid.
  3. Mix cream cheese mixture: In a large bowl, mix cream cheese, sour cream, and broth until smooth. Stir in chicken, spinach mixture, 1/2 cup mozzarella, Parmesan, and seasonings.
  4. Assemble casserole: Transfer the mixture to the baking dish. Top with the remaining mozzarella.
  5. Add breadcrumb topping: Combine breadcrumbs with melted butter and sprinkle over the casserole.
  6. Bake: Bake for 25-30 minutes until bubbly and golden brown. Let stand for 5 minutes before serving.
