Ingredients

For the pastry:

For the custard filling:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • Pinch of salt
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter

Instructions

  1. Step 1: Preheat the Oven – Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Step 2: Prepare the Puff Pastry – Using a round cutter, slice the thawed puff pastry into circles. Arrange them on the prepared baking sheet and gently prick each with a fork to prevent puffing too much. Bake for 15–18 minutes, or until golden and crisp. Remove from oven and let them cool completely.
  3. Step 3: Make the Custard Filling – In a medium saucepan, whisk together the milk, sugar, cornstarch, and a pinch of salt. Heat gently over medium heat, stirring constantly, until the mixture starts to thicken. In a separate bowl, whisk the egg yolks. Gradually pour a bit of the hot milk mixture into the yolks to temper them, whisking quickly to avoid scrambling. Return the yolk mixture back to the saucepan. Continue stirring and cooking over low heat until smooth and thickened — about 5 minutes. Remove from heat, then stir in vanilla extract and butter until fully combined. Transfer to a bowl, cover with plastic wrap touching the surface, and chill in the fridge for 30 minutes.
  4. Step 4: Assemble the Cream Puffs – Once the custard is chilled and the pastry circles are cool, carefully slice each puff in half horizontally. Spoon or pipe the custard onto the bottom half of each pastry, then place the top half gently over it to form a filled sandwich.
