These Southwest Chicken Egg Rolls are a delightful fusion of tender chicken, sweet corn, hearty black beans, fresh spinach, vibrant red bell peppers, and spicy jalapenos, all seasoned with cumin and chili powder, wrapped in crunchy egg roll wrappers. Perfect for a tasty appetizer or a flavorful main dish!

Ingredients

For the Filling:

  • 2 cups cooked chicken* (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno de-seeded
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups Monterey jack cheese
  • 1 package egg roll wrappers (20 egg roll wrappers)

Instructions

  1. Prepare the Filling: In a large bowl, combine chicken, corn, black beans, spinach, red bell pepper, and jalapeno. Add cumin, chili powder, salt, and black pepper. Mix well.
  2. Add Cheese: Stir in the shredded Monterey jack cheese until evenly distributed.
  3. Fill the Wrappers: Place an egg roll wrapper on a clean surface. Add 2-3 tablespoons of the filling in the center. Roll the wrapper according to package instructions, sealing the edges with water.
  4. Cooking Options: For frying, heat oil to 350°F and fry egg rolls until golden. For baking, brush rolls with oil, bake at 425°F for 15-20 minutes, flipping halfway.
