This Small Batch Florida Orange Juice Shrimp Boil is a delightful twist on the classic seafood boil, featuring the bright and citrusy flavor of Florida orange juice. Served with a luscious orange butter sauce, this dish is perfect for gatherings or special occasions.

Ingredients

Seafood Boil

  • 4 cups Florida Orange Juice
  • 3 tablespoons Cajun seasoning, salt-free
  • 1 tablespoon black pepper
  • 24 cups water
  • 3 cups light or lager style beer
  • ½ cup kosher salt
  • 5 cloves garlic, smashed
  • 2 lemons, wedges
  • 2 sweet onions, quartered
  • 3 stalks celery, pieces
  • 1 bundle fresh thyme
  • ¼ cup hot sauce
  • 23 bay leaves
  • 24 ounces baby potatoes
  • 1 ½ pounds Andouille or smoked sausage
  • 3 ears of corn
  • 2 pounds extra-large or jumbo shrimp

Orange Juice Butter Sauce

  • 4 cloves garlic, minced
  • 1 1/2 cups Florida Orange Juice
  • 1/21 cup reserved liquid from seafood boil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • ¾ cup unsalted butter
  • 12 tablespoons hot sauce
  • 12 tablespoons Cajun seasoning blend
  • 35 teaspoons kosher salt

Instructions

  1. Seafood Boil – Prepare seasoning blend. Combine ingredients in large stockpot. Boil, add potatoes, corn, sausage, shrimp. Remove and arrange on platter.
  2. Orange Butter Sauce – Cook orange juice and garlic. Add seafood boil liquid. Whisk in lemon zest, lemon juice, butter. Season with hot sauce, Cajun seasoning, salt. Drizzle over seafood boil and garnish.

Notes

  • This recipe uses salt-free Cajun seasoning with added kosher salt for controlled seasoning.
  • If using Cajun seasoning with salt, adjust kosher salt accordingly.
