Slow Cooker Honey Lime Chicken Tacos Recipe

These slow cooker honey lime chicken tacos are a delightful twist on traditional tacos. The tender and flavorful chicken is cooked to perfection in a zesty honey lime sauce, making for a delicious and easy meal that the whole family will love.

Ingredients

    Chicken:

  • 2 pounds boneless skinless chicken breasts
  • Sauce:

  • 3 Tablespoons fajita seasoning or one ounce packet
  • ½ cup lime juice
  • ½ cup honey
  • ¼ cup chicken stock
  • 3 cloves garlic, minced
  • ½ teaspoon paprika
  • lime and parsley to garnish (optional)

Instructions

  1. Add the chicken breasts to the basin of a 6 quart slow cooker. 2 pounds boneless skinless chicken breasts
  2. In a small bowl, stir together the fajita seasoning, lime juice, honey, chicken stock, garlic, and paprika. 3 Tablespoons fajita seasoning, ½ cup lime juice, ½ cup honey, ¼ cup chicken stock, 3 cloves garlic, ½ teaspoon paprika
  3. Pour the sauce mix over the chicken.
  4. Cover and cook on LOW for 4-6 hours or HIGH for 3-4 hours.
  5. Once done, shred the chicken and return to the juice in the slow cooker. Garnish with lime and parsley if desired.
  6. Serve on tortillas with your favorite toppings.

Notes

  • Chicken thighs can also be used.
  • To add heat, you can add jalapenos or red pepper flakes.
  • Store leftovers covered in the fridge for up to 3 days.
  • Optional toppings: shredded pepper jack cheese, cotija cheese, chopped cilantro or parsley, sliced grape tomatoes or pico de gallo, lime slices, etc.
  • Freezer directions: Prepare as directed and pour into a gallon freezer bag. Freeze for up to 3 months. Thaw overnight in the fridge and then cook as directed.
  • You can use a packet of fajita seasoning or make your own blend.
  • Every slow cooker runs differently. Times given are a general recommendation and should be tested in your own slow cooker and adjusted as needed.
