Slow Cooker Garlic Parmesan Chicken is a super easy, super comforting, super flavorful dinner! Made in the crockpot, there is very little hands-on time. Let the slow cooker do the work and cook your meat and potatoes at the same time.

Ingredients

For Seasoning Mix:

  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 1 teaspoon pepper

For Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 3 cloves garlic minced
  • 3 tablespoons olive oil

For Potatoes:

  • 1 pound baby potatoes, halved
  • 1 cup shredded Parmesan
  • parsley for garnish

Instructions

  1. Prepare Seasoning Mix: In a small bowl, combine garlic salt, paprika, and pepper. Sprinkle half on chicken thighs.
  2. Sear Chicken: Sear seasoned chicken thighs skin down in a skillet with oil.
  3. Prepare Garlic Mix: Combine remaining seasoning with minced garlic and oil.
  4. Prep Potatoes: Toss halved potatoes with seasoning mix.
  5. Slow Cook: Place potatoes in slow cooker, top with chicken. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  6. Finish: Sprinkle with Parmesan before serving. Garnish with parsley.
  7. Serve: Enjoy!

  • Store leftovers covered in the fridge for up to 4 days.
  • If using boneless chicken, adjust cooking time accordingly.
