Ingredients

Chicken and Vegetables:

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 cup diced yellow onion
  • 3 medium carrots, peeled and sliced
  • 3 stalks celery, diced

Broth and Seasonings:

  • 6 cups chicken broth
  • 1 teaspoon minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Additional:

  • 1 cup uncooked white rice
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Prepare Ingredients: In a slow cooker, combine chicken, onion, carrots, celery, chicken broth, garlic, thyme, parsley, salt, and pepper.
  2. Cook: Cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  3. Add Rice: Add uncooked white rice and continue cooking for an additional hour.
  4. Shred Chicken: Remove chicken, shred it, and return it to the soup.
  5. Finish and Serve: Sprinkle with fresh parsley and serve hot.
