Slow Cooker Cheesy Chicken Parmesan Meatballs are a delicious twist on traditional chicken parmesan. These savory meatballs are made with seasoned ground chicken, smothered in marinara sauce, and topped with melted mozzarella cheese, all cooked to perfection in a slow cooker.

Ingredients

For the Meatballs:

  • 23 ounces marinara sauce
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1/2 cup yellow onion, minced
  • 1/3 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 Tablespoon salt
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1 pound ground chicken
  • 2 cups mozzarella cheese, shredded

Instructions

  1. Pour Sauce: Pour half of the marinara sauce into the slow cooker.
  2. Prepare Meatball Mixture: In a large bowl, whisk eggs, then add breadcrumbs, onion, parsley, garlic, salt, oregano, and pepper. Mix well.
  3. Combine with Chicken: Add ground chicken to the mixture and combine thoroughly.
  4. Shape Meatballs: Form mixture into balls and place in the slow cooker.
  5. Cook: Pour remaining sauce over meatballs. Cook on LOW for 6 hours or HIGH for 3 hours.
  6. Add Cheese: Sprinkle shredded mozzarella over meatballs, cover, and let melt for 10 minutes.
  7. Serve: Garnish with parsley and enjoy!
