Upgrade your ramen noodles with this flavorful and satisfying slow cooker beef ramen recipe. Packed with juicy ground beef, carrots, red peppers, and green onions simmered in a sweet and savory sauce, it’s a Japanese-inspired dish that will leave you and your family craving for more.

Ingredients

For the Beef Ramen:

  • 1 pound ground beef (sirloin recommended)
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced
  • 23 large scallions, roughly chopped
  • 3 cloves garlic, minced
  • ½ cup low sodium soy sauce
  • 2 Tablespoons brown sugar
  • 14.25 ounces chicken stock or beef stock
  • 2 packs ramen noodles

Instructions

  1. Brown the Beef: In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess grease if needed.
  2. Prepare Slow Cooker: Transfer the cooked beef to a 6-quart slow cooker.
  3. Add Vegetables: Add carrots, red bell pepper, and scallions to the slow cooker.
  4. Make Sauce: In a medium bowl, whisk together garlic, soy sauce, brown sugar, and chicken stock. Pour this sauce over the ingredients in the slow cooker.
  5. Cook: Cover and cook on LOW for 4-6 hours.
  6. Add Noodles: About 30 minutes before serving, add the ramen noodles to the slow cooker, discarding the seasoning packets. Stir frequently until noodles are tender.
  7. Serve: Top with additional scallions and sesame seeds before serving.

Notes

  • Serve over rice or in lettuce leaves for a different twist.
  • Try using ground turkey or chicken as a lighter alternative.
  • For extra heat, sprinkle red pepper flakes or add sriracha to taste.
  • Enhance the broth with fish sauce or oyster sauce for added depth of flavor.
  • Finish with a squeeze of lime juice or add fresh/pickled ginger for a zesty kick.
  • Use only one pack of noodles for a brothier consistency.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Cooking times may vary depending on your slow cooker, so adjust as needed.
