Ingredients

  • 1 cup shredded carrots
  • 1 cup crushed pineapple (drained)
  • 1 cup rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, whisk together flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs, then stir in the oil, vanilla, shredded carrots, and drained pineapple.
  4. Pour the wet mixture into the dry ingredients and stir just until combined. Do not overmix.
  5. Transfer the batter to the greased loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
