Ingredients

Sweet Potato Rounds:

  • 3 large sweet potatoes, sliced into -inch rounds
  • 3 tablespoons olive oil
  • ½ teaspoon cinnamon
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Additional Ingredients:

  • 1 tablespoon honey (regular or hot)
  • ⅓ cup crumbled feta cheese
  • Fresh chives or parsley, chopped
  • Additional honey, for serving

Instructions

  1. Preheat the oven: Preheat the oven to 425°F.
  2. Prepare sweet potatoes: Wash, dry, and slice sweet potatoes into rounds.
  3. Coat sweet potatoes: Drizzle olive oil on a baking sheet, add sweet potatoes, and coat with oil.
