Ingredients

Potatoes:

  • 12 large baking potatoes, washed and cubed

Baked Feta and Seasonings:

  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 head of garlic, top sliced off
  • 1 lemon, quartered
  • 1 tablespoon honey
  • 1/4 cup (20 g) fresh basil, chopped

Instructions

  1. Preheat and Prepare: Preheat oven to 390°F (200°C). Cube potatoes and place in a baking dish.
  2. Season the Potatoes: Drizzle 1 tablespoon of olive oil over potatoes. Sprinkle with thyme, oregano, salt, and pepper. Toss well to coat.
  3. Add the Feta and Garlic: Place feta in the center of the dish. Press one side of feta into seasonings on potatoes. Add garlic head and lemon wedges. Drizzle remaining olive oil over everything.
  4. Bake to Perfection: Roast for 45-55 minutes until potatoes are crispy and golden. Remove garlic if browning too much.
  5. Mash and Mix: Squeeze roasted garlic cloves into a paste. Add garlic paste, lemon juice, and basil to the dish. Mix gently to combine flavors.
  6. Finishing Touch: Drizzle honey over the top and sprinkle with additional basil.
  7. Serve and Enjoy:

  • For crispier potatoes, soak in cold water for 30 minutes before cubing.
