Ingredients

Chicken Pot Pie Orzo:

  • 1 lb boneless skinless chicken breast, diced
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups low sodium chicken broth
  • 1 cup milk (whole or 2%)
  • 1 cup orzo pasta
  • 1 cup frozen peas and carrots
  • 1/2 cup corn (fresh or frozen)
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Saute Aromatics: Heat olive oil, cook onion until translucent, add garlic.
  2. Cook Chicken: Add chicken, season, cook until lightly browned.
  3. Make Roux: Whisk butter and flour to form a roux, cook.
  4. Add Liquid: Whisk in chicken broth and milk until smooth, bring to boil.
  5. Cook Orzo: Add orzo, peas, carrots, corn, simmer until tender.
