Ingredients

Dough:

  • 4 ½ cups all-purpose flour ((spooned and levelled; plus more if needed))
  • 1 tablespoon sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 1 ¾ cups warm milk ((or water; around 110°F))
  • 2 tablespoons melted butter

Boiling and Finishing:

  • 9 cups water
  • 1/2 cup baking soda
  • 1 large egg ((mixed with 1 tablespoon of water))

Instructions

  1. Mix the Dough: In a stand mixer bowl, combine the flour, sugar, yeast, milk, butter, and salt. Mix with a dough hook on medium speed for about 4-5 minutes until a smooth dough forms. Add more flour if too sticky.
  2. Rise the Dough: Cover the bowl and let the dough rise in a warm place for 30-60 minutes until doubled in size.
  3. Preheat and Prepare: Preheat oven to 450°F. Line baking sheets with parchment paper. Boil water and baking soda in a pot.
  4. Shape and Boil: Divide dough, roll into ropes, and cut into bites. Boil in water for 30 seconds, then place on baking sheets.
  5. Bake: Brush with egg wash, sprinkle with salt, and bake for 12-14 minutes until golden brown.

Notes

  • You can customize toppings like sesame seeds or cinnamon sugar for variety.
