Possum Pie is a delightful layered dessert that combines a nutty crust, creamy cheesecake-like filling, decadent chocolate and vanilla pudding layers, and a fluffy whipped topping. Perfect for any occasion!

Ingredients

Nutty Crust:

  • 1 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/2 cup unsalted butter, melted

Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping

Pudding Layers:

  • 1 package instant chocolate pudding mix
  • 1 package instant vanilla pudding mix
  • 2 3/4 cups cold milk

Topping:

  • Whipped topping
  • Chocolate shavings, for garnish

Instructions

  1. Prepare Nutty Crust: Preheat oven to 350°F (175°C). Combine flour, pecans, and melted butter in a bowl. Press into a 9×13-inch baking dish. Bake for 15 minutes, then cool.
  2. Make Cream Cheese Layer: Beat cream cheese until smooth. Gradually add powdered sugar and beat until creamy. Fold in half of the whipped topping. Spread over cooled crust.
  3. Prepare Pudding Layers: Whisk chocolate and vanilla pudding mixes with cold milk. Pour over cream cheese layer.
  4. Add Topping: Spread remaining whipped topping over pudding layer. Sprinkle with chocolate shavings.
  5. Chill and Serve: Refrigerate for at least 2 hours before serving.
