Pizza Enchiladas are a delightful fusion of two beloved dishes – pizza and enchiladas. These delicious enchiladas are filled with a savory mixture of ground beef, bell peppers, pepperoni, black olives, and gooey mozzarella cheese, all wrapped in flour tortillas and baked to perfection. A fun and flavorful twist on traditional enchiladas!

Ingredients

For the Filling:

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 1 cup diced bell pepper
  • 1 cup sliced pepperoni
  • 1 cup sliced black olives
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 8 large flour tortillas

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray.
  2. Prepare the Filling: In a skillet over medium heat, cook the ground beef until browned. Add the diced onion and bell pepper, cooking until softened. Stir in the pepperoni, black olives, pizza sauce, Italian seasoning, and garlic powder. Let it simmer for a few minutes.
