These Pizza Cupcakes are a fun and delicious twist on classic pizza, perfect for parties or a quick snack. Using pizza dough baked in a muffin tin, each cupcake is topped with sauce, cheese, pepperoni, and seasonings, creating individual servings bursting with traditional Italian flavors.

Ingredients

Base

  • Cooking spray
  • 1 (11 ounce) can refrigerated pizza crust

Toppings

  • 8 tablespoons pizza sauce (such as Classico)
  • 8 teaspoons shredded mozzarella cheese
  • 8 tablespoons shredded mozzarella cheese
  • 8 slices pepperoni, quartered
  • 8 teaspoons finely chopped red onion
  • 8 medium cherry tomatoes

Seasonings

  • 1/4 teaspoon Italian seasoning, or to taste
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/4 teaspoon garlic salt, or to taste

Instructions

  1. Prepare the pan: Preheat your oven to 375°F (190°C). Lightly spray a standard 12-cup muffin tin with cooking spray to prevent sticking.
  2. Shape the dough: Unroll the refrigerated pizza crust and cut into 8 equal pieces. Press each piece into the bottom and up the sides of each muffin cup to form a cup shape.
  3. Add sauce and cheese: Spoon about 1 tablespoon of pizza sauce into each dough cup, then sprinkle about 1 teaspoon of shredded mozzarella cheese on top.
  4. Add toppings: Place 1 teaspoon of finely chopped red onion, a quartered slice of pepperoni, and a medium cherry tomato half (or whole if preferred) into each cup on top of the cheese.
  5. Season: Sprinkle each pizza cupcake with Italian seasoning, red pepper flakes, and garlic salt to taste for added flavor.
  6. Top with cheese: Finish with an additional tablespoon of shredded mozzarella cheese evenly over each cupcake.
  7. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes until the dough is golden brown and cheese is melted and bubbly.
  8. Cool and serve: Remove from oven and allow the pizza cupcakes to cool in the pan for 5 minutes before carefully removing them. Serve warm.

Notes

  • You can substitute pepperoni with any favorite pizza topping like mushrooms, olives, or bell peppers.
  • Adjust the seasoning quantities according to your spice preference.
  • These pizza cupcakes reheat well in a toaster oven or microwave for quick snacks later.
  • If you want a crispier crust, bake a few extra minutes but watch carefully to avoid burning.
  • Using refrigerated pizza dough saves time and effort compared to making your own crust.
