Pepper steak made in a Crock Pot is a comforting, easy one-pot meal featuring tender beef strips, bell peppers, and onions simmered in a rich, savory sauce. Perfect served over rice or noodles for a hearty dinner.

Ingredients

  • 1 1/2 pounds of flank steak or sirloin, sliced into thin strips
  • 2 bell peppers, sliced (one red and one green)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Cooked rice or noodles (for serving)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear sliced steak for 2-3 minutes per side until browned.
  2. Transfer steak to Crock Pot. Add bell peppers, onion, and garlic.
  3. In a bowl, whisk beef broth, soy sauce, Worcestershire sauce, vinegar, sugar, black pepper, and salt. Pour over ingredients in Crock Pot.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours, until steak is tender.
  5. To thicken sauce, mix cornstarch with cold water and stir into Crock Pot 30 minutes before end of cooking.
  6. Serve pepper steak over rice or noodles. Enjoy!
