A sweet treat that’s easy to make, this moist and delicious peanut butter bread can be enjoyed at any hour of the day.

Ingredients

Wet Ingredients:

  • 1 cup milk
  • 1 cup granulated sugar
  • 1 cup peanut butter
  • 2 eggs, room temperature

Dry Ingredients:

  • 1½ cups flour
  • ½ cup old fashioned oats
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat Oven: Move the oven rack to the center of the oven. Preheat to 350°F.
  2. Prepare Pan: Spray an 8×4 loaf pan with nonstick spray and line with parchment paper.
  3. Blend Ingredients: In a blender, mix milk, sugar, peanut butter, and eggs until smooth.
  4. Add Dry Ingredients: Blend in flour, oats, baking powder, and salt until smooth.
  5. Bake: Pour batter into the pan and bake for 1 hour 10 minutes at 350°F.
  6. Cool and Serve: Cool in the pan for 10 minutes, then slice and serve with optional toppings.

Notes

  • This recipe calls for room-temperature eggs. If needed, warm them in a bowl of water for 5 minutes.
  • Coat the measuring cup with non-stick spray for easy release of peanut butter.
  • If using the same cup for milk and peanut butter, measure milk first for easier cleanup.
  • For lower wattage appliances, add dry ingredients gradually to avoid overloading.
  • To prevent over-browning, cover the bread with foil after 50 minutes of baking.
