Wet Ingredients:
- 1 cup milk
- 1 cup granulated sugar
- 1 cup peanut butter
- 2 eggs, room temperature
Dry Ingredients:
- 1½ cups flour
- ½ cup old fashioned oats
- 1 tablespoon baking powder
- ½ teaspoon salt
- Preheat Oven: Move the oven rack to the center of the oven. Preheat to 350°F.
- Prepare Pan: Spray an 8×4 loaf pan with nonstick spray and line with parchment paper.
- Blend Ingredients: In a blender, mix milk, sugar, peanut butter, and eggs until smooth.
- Add Dry Ingredients: Blend in flour, oats, baking powder, and salt until smooth.
- Bake: Pour batter into the pan and bake for 1 hour 10 minutes at 350°F.
- Cool and Serve: Cool in the pan for 10 minutes, then slice and serve with optional toppings.
Notes
- This recipe calls for room-temperature eggs. If needed, warm them in a bowl of water for 5 minutes.
