Ingredients

Filling:

  • 1 cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 2 cups sharp cheddar cheese, grated
  • 2 cans (20 oz each) pineapple chunks, drained

Topping:

  • 6 tablespoons reserved pineapple juice from the drained cans
  • 1 cup Ritz cracker crumbs
  • 8 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease a medium-sized casserole dish lightly with butter or nonstick spray and set aside.
  2. Prepare the filling: Combine the sugar and flour in a large mixing bowl. Gradually fold in the grated cheddar cheese. Add pineapple chunks and stir gently until combined. Transfer to the casserole dish.
