Cookies:
1 ¼ cup all-purpose flour
⅓ cup + 1 tablespoon granulated sugar
1 tablespoon cornstarch
¼ teaspoon table salt
1 stick unsalted butter (cold and cut into ½-inch cubes)
¼ cup fresh cranberries (finely chopped)
½ tablespoon orange zest
Orange Glaze:
2/3 cup powdered sugar
3 teaspoons orange juice
Instructions
To make the cookies: In a large mixing bowl, combine flour, sugar, cornstarch, and salt. Add butter cubes and mix until evenly distributed. Stir in cranberries and orange zest.
Turn mixture onto parchment paper, knead into a ball, then roll into a rectangle. Freeze for 20 minutes.
Preheat oven to 325°F. Slice dough into sticks, place on baking sheet, and bake for 20 minutes.
Cool cookies on a wire rack.
To make orange glaze: Combine powdered sugar and orange juice. Drizzle over cooled cookies.
Notes
For extra flavor, consider adding a sprinkle of coarse sugar on top of the glaze for a bit of crunch.
