One Pot Chili Mac is a delightful combination of chili and macaroni and cheese, creating a hearty and flavorful one-pot meal that is both meaty and cheesy with a hint of spice.

Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • ½ cup yellow onion, diced
  • 2 tsp minced garlic (about 2 cloves)
  • 1 tbsp chili powder

Additional Ingredients:

  • 20 oz (2 10-ounce cans) chunky Rotel, undrained
  • 15.5 oz chili beans, undrained
  • 3½ cups water
  • 2 cups elbow macaroni
  • 8 oz (½ of 16-ounce box) Velveeta
  • 1 cup shredded fiesta blend cheese
  • Chopped parsley, for optional garnish

Instructions

  1. Cook Ground Beef Mixture: In a large skillet over medium-high heat, cook ground beef, onion, and garlic until beef is crumbled and cooked through.
  2. Season: Add chili powder to the beef mixture and combine.
  3. Add Beans and Rotel: Stir in Rotel and chili beans.
  4. Add Water and Macaroni: Pour in water and bring to a boil. Add elbow macaroni, cover, and simmer until al dente.
  5. Melt Velveeta: Add Velveeta chunks, stirring until melted and well combined.
  6. Finish: Sprinkle with fiesta cheese, remove from heat, garnish with parsley, and serve.

Notes

  • You can adjust the spice level by adding more or less chili powder.
  • Feel free to top with additional cheese or your favorite chili toppings.
