Ingredients

Chicken:

  • 2 lbs small boneless chicken breasts or thighs

Creamy Sauce:

  • 4 oz cream cheese, at room temperature
  • 1 tbsp dried parsley
  • 1 tbsp dried chives
  • 2 tsp dried dill
  • 2 tsp garlic powder
  • ½ tsp paprika
  • 1 yellow onion, chopped
  • 1 cup salsa verde
  • 2 tbsp pickled jalapeños (optional)
  • 1 cup heavy cream, or canned coconut milk
  • 1 cup grated parmesan cheese
  • 2 tbsp cold, salted butter, sliced
  • 3 cups chopped broccoli

Instructions

  1. Preheat the oven to 400°F.
  2. In a baking dish, toss together the chicken, cream cheese, parsley, chives, dill, garlic powder, and paprika. Season well with salt and pepper.

  3. To the chicken, add the onion, then pour over the salsa verde, jalapeños, and cream/milk.
  4. Add 1/2 cup parmesan. Stir until creamy and well-mixed. Arrange the butter, then broccoli on top. Bake for 30-40 minutes, until the chicken is cooked through. Gently stir to combine. Top with 1/2 cup parmesan.

  5. Serve the chicken and sauce over steamed rice or orzo for a complete meal. Enjoy!
