These old-fashioned peanut butter cookies have a crispy, golden-brown outside and a soft center, just like the ones that grandma used to make.

Ingredients

Peanut Butter Cookie Dough:

  • 1 ¼ cups creamy peanut butter
  • 1 cup salted butter, room temperature
  • 1 ¼ cups light brown sugar, packed
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone liners.
  2. Mix the Dough: In a large bowl, beat peanut butter and butter until smooth. Add sugars, beat until fluffy. Mix in eggs one at a time, then vanilla.
  3. Combine Dry and Wet Ingredients: In a medium bowl, whisk flour and baking soda. Add to wet ingredients, stir until combined.
  4. Shape and Bake: Scoop dough into balls, place on baking sheets. Press down with a fork to make a cross-hatch pattern. Bake for 12-13 minutes.
  5. Cool and Serve: Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container at room temperature for up to 4-5 days.
  • For smaller cookies, use 1-Tablespoon size balls and bake for about 10 minutes.
