Mexican White Trash Casserole is a simple and delicious layered dish featuring tortilla chips, seasoned beef, refried beans, and gooey melted cheese. Perfect for busy weeknights.

Ingredients

Casserole Foundation

  • 1 bag (9-10 oz) tortilla chips, lightly crushed
  • 1 pound ground beef or turkey for a lighter option
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup salsa, your preferred heat level
  • 1 can (15 oz) refried beans
  • 2 cups shredded Mexican blend cheese, divided

Optional Toppings for Serving

  • Sour cream
  • Guacamole
  • Diced fresh tomatoes
  • Sliced black olives
  • Chopped green onions
  • Fresh cilantro leaves

Instructions

  1. Preheat Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Cook Beef: Brown the ground beef in a skillet, then add taco seasoning and salsa. Simmer for 2-3 minutes.
  3. Layer Casserole: Spread half of the tortilla chips in the baking dish. Add refried beans, half of the beef mixture, and 1 cup of cheese. Repeat layers.
  4. Bake: Bake for 20-25 minutes until cheese is melted and golden. Let cool slightly, then add toppings and serve.

Notes

  • Leave tortilla chips slightly chunky for better texture.
  • Prepare ahead by assembling and refrigerating the casserole before baking.
  • Use freshly shredded cheese for best results.
  • Leftovers can be stored in the fridge for up to 3 days.
  • For a vegetarian version, substitute beef with black beans or plant-based meat.
