Ingredients

Filling:

  • 1 cup unsalted butter, softened
  • 1 tablespoon vanilla extract
  • 14 ounces sweetened condensed milk
  • 4 cups powdered sugar
  • 14 ounces sweetened shredded coconut
  • 10 ounces maraschino cherries, drained and chopped
  • 3 cups pecans, chopped

Coating:

  • 6 cups semi-sweet chocolate chips
  • 4 tablespoons shortening

Instructions

  1. In a large mixing bowl, beat together softened butter, vanilla, and sweetened condensed milk until smooth.
  2. Add the powdered sugar and beat until combined.
  3. Mix in the coconut, cherries, and pecans. Refrigerate for 1 to 2 hours to firm up.
  4. Form balls from the mixture using a scoop or melon baller.
  5. Line sheet pans with parchment paper and place formed balls on them.
  6. Melt chocolate and shortening in the microwave.
  7. Dip and roll each candy ball in the melted chocolate.
  8. Place dipped candies back on the parchment paper to set.
