Filling:

  • sticks unsalted butter, melted
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3 cups shredded coconut, sweetened
  • 14 ounce (1 can) sweetened condensed milk
  • 10 ounce (1 jar) maraschino cherries, drained and chopped
  • 1½ cups pecans, chopped

Coating:

  • 16 ounces chocolate melting wafers

Instructions

  1. Mix Butter and Sugar: In a large bowl, blend melted butter and powdered sugar until smooth. Add vanilla extract and stir well.
  2. Incorporate Coconut and Milk: Combine shredded coconut and sweetened condensed milk into the mixture, stirring until evenly combined.
  3. Add Cherries and Pecans: Gently fold in chopped maraschino cherries and pecans until fully integrated. The mixture should be thick and sticky.
  4. Shape Balls: Roll the mixture into 1-inch balls and place them on a lined baking sheet. Chill in the refrigerator until firm.
  5. Melt Chocolate: Melt the chocolate wafers following package instructions until smooth.
