Ingredients

Egg White Mixture:

  • 1/4 cup water (60 mL)
  • 3/4 cup honey (255 g)

Additional:

  • 1 tsp vanilla extract (5 mL)

Instructions

  1. Beat Egg Whites: In a mixing bowl, beat egg whites and cream of tartar until soft peaks form, about 5 minutes.
  2. Prepare Syrup: In a saucepan, boil sugar, water, and honey until it reaches 246°F (119°C).
  3. Combine Mixtures: Slowly drizzle the hot syrup into the egg whites while mixing on low.
  4. Add Vanilla: Stir in the vanilla extract, then beat on high speed until the mixture is fluffy, about 10 minutes.
  5. Store: Transfer the Marshmallow Fluff to a sealed container and store at room temperature for up to 1 week.
