These Lemon Blueberry Oat Bars are a delightful combination of zesty lemon and sweet blueberries, perfect for a healthy snack or breakfast on the go. They are easy to make and can be customized with your favorite add-ins.

Ingredients

Oat Base:

  • 2 1/2 cups old fashioned oats, gluten-free certified if necessary
  • 3/4 cup flour, gluten-free or all-purpose
  • 1/4 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt

Lemon Blueberry Filling:

  • 1/2 cup + 1 tablespoon non-dairy milk (such as almond milk)
  • 1/4 cup maple syrup
  • 1 flax egg (1 Tbsp ground flax mixed with 2 1/2 Tbsp water)
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • 1/2 cup dried blueberries (or fresh blueberries)

Instructions

  1. Preheat: Preheat the oven to 350°F (180°C) and line a baking dish with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, mix together the oats, flour, coconut sugar, baking powder, cinnamon, and salt.
  3. Prepare Wet Ingredients: In a separate bowl, whisk together the non-dairy milk, maple syrup, flax egg, vanilla extract, lemon zest, and lemon juice.
  4. Combine: Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the dried blueberries.
  5. Bake: Press the mixture into the prepared baking dish and bake for about 25-30 minutes, or until golden brown.
  6. Cool and Serve: Allow the bars to cool before slicing into squares. Enjoy!
