Ingredients

For the Dough:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup honey
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup chopped almonds or hazelnuts
  • 1/4 cup chopped candied orange or lemon peel

For the Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons water or lemon juice

Instructions

  1. Prepare the Dough: In a bowl, whisk together the flour, baking soda, cinnamon, cloves, allspice, nutmeg, and salt.
  2. Mix the Wet Ingredients: In a saucepan, gently heat the honey and brown sugar until dissolved. Let it cool slightly. In a large bowl, combine the honey mixture with the egg.
  3. Combine and Chill: Add the flour mixture, nuts, and candied peel to the wet ingredients, stirring until a sticky dough forms. Cover and chill for at least 2 hours or overnight.
  4. Bake the Cookies: Preheat oven to 350°F (175°C). Roll the dough into balls, flatten slightly, and place on prepared sheets. Bake for 10-12 minutes until lightly golden.
  5. Glaze the Cookies: Whisk powdered sugar with water or lemon juice until smooth. Brush over cooled cookies and let set before serving.
