Pastina Soup Ingredients:

  • 1 cup pastina pasta
  • 6 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan rind or grated cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Chop Vegetables: Chop onion, carrots, and celery.
  2. Sauté Vegetables: Heat olive oil in a large pot; sauté the vegetables for 5 minutes.
  3. Add Broth: Add broth, Parmesan rind (optional), salt, and pepper; bring to a boil.
  4. Simmer: Reduce heat and simmer for 20 minutes until vegetables soften.
  5. Blend and Cook: Blend vegetables with some broth and return to pot. Add pastina; cook for 5-6 minutes until tender. Serve with Parmesan and parsley.

Notes

  • For a vegetarian version, use vegetable broth.
