Ingredients

Wet Ingredients:

  • 2 large ripe bananas, mashed
  • 1/4 cup extra virgin olive oil
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or pure maple syrup
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Dry Ingredients:

  • 1 1/2 cups almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix Wet Ingredients: In a large bowl, combine mashed bananas, olive oil, applesauce, honey/maple syrup, eggs, and vanilla extract.
  3. Combine Dry Ingredients: In another bowl, mix almond flour, baking soda, baking powder, and cinnamon.
  4. Blend Wet and Dry Mixtures: Slowly add the dry ingredients into the wet mixture, stirring until just combined.
  5. Bake: Pour the batter into the loaf pan and bake for about 50-60 minutes or until a toothpick inserted comes out clean.
