A refreshing and vibrant Cape Cod Salad by Ina Garten featuring mixed greens, diced Granny Smith apples, dried cranberries, toasted nuts, and crumbled blue cheese, all tossed in a tangy citrus vinaigrette dressing. Perfect for a light lunch or as a side dish.

Ingredients

Salad

  • 6 cups mixed salad greens
  • 1 large Granny Smith apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup toasted walnuts or pecans, chopped
  • 1/2 cup crumbled blue cheese or Gorgonzola

Dressing

  • 1/4 cup orange juice
  • 2 tbsp lemon juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup olive oil

Instructions

  1. Make the Dressing: Whisk together orange juice, lemon juice, apple cider vinegar, Dijon mustard, honey, kosher salt, black pepper, and olive oil in a bowl until the mixture is emulsified and well combined.
  2. Toast the Nuts: Toast the walnuts or pecans in a dry skillet over medium heat until fragrant and lightly browned, then chop them once cooled to enhance their flavor and texture.
  3. Combine Salad Ingredients: In a large bowl, combine the mixed salad greens, diced Granny Smith apple, dried cranberries, toasted chopped nuts, and crumbled blue cheese or Gorgonzola.
  4. Toss and Serve: Drizzle the prepared dressing over the salad ingredients, toss gently to evenly coat everything, and serve immediately to enjoy the fresh flavors and textures.

Notes

  • Use either walnuts or pecans according to your preference for a slightly different nutty flavor.
  • Blue cheese or Gorgonzola can be substituted with goat cheese for a milder taste.
  • For a vegan version, omit the cheese and substitute honey with maple syrup.
  • Toast the nuts carefully to avoid burning, which can add bitterness.
  • This salad is best served fresh to maintain the crispness of the greens and apple.
