A comforting and hearty Homestyle Chicken Noodle Soup recipe that is perfect for fall and winter nights when you crave a healthier soup option. This recipe includes stovetop, crockpot, and Instant Pot instructions for added convenience.

Ingredients

Vegetables:

  • 2 tbsp extra virgin olive oil
  • 2 tbsp salted butter
  • 1 yellow onion, chopped
  • 2 shallots, sliced
  • 4 cloves garlic, chopped
  • 2 ribs celery, chopped
  • 6 carrots, chopped
  • 2 tbsp fresh thyme leaves
  • 1 tbsp chopped fresh sage
  • 1 tbsp chopped fresh rosemary
  • 1 bay leaf

Other Ingredients:

  • ⅓ cup dry sherry
  • 8 cups low sodium chicken broth
  • 1 lb boneless chicken breasts or thighs
  • 23 cups egg noodles
  • ⅓ cup shaved parmesan cheese
  • ¼ cup chopped parsley

Instructions

  1. Stovetop Instructions: Melt the olive oil and butter in a Dutch oven. Add onions, cook for 3-5 minutes. Add shallots, garlic, celery, carrots, thyme, sage, rosemary, season. Cook for 5 minutes. Pour in sherry and broth, bring to a boil. Add chicken, bay leaf, simmer for 20 minutes. Shred chicken, remove bay leaf, add noodles, cook until soft. Stir in parmesan and parsley. Serve topped with parmesan.
  2. Crockpot Instructions: Combine olive oil, butter, onions, shallots, garlic, celery, carrots, thyme, sage, rosemary in crockpot. Add sherry, broth, chicken, bay leaf. Cook on high for 3-4 hours or low for 6-8 hours. Shred chicken, remove bay leaf, add noodles, cook until soft. Stir in parmesan and parsley. Serve topped with parmesan.
  3. Instant Pot Instructions: Combine olive oil, butter, onions, shallots, garlic, celery, carrots, thyme, sage, rosemary in Instant Pot. Add sherry, broth, chicken, bay leaf. Cook on high pressure for 8-10 minutes. Shred chicken, remove bay leaf, add noodles, cook until soft. Stir in parmesan and parsley. Serve topped with parmesan.

Notes

  • This soup can be stored in the refrigerator for up to 4 days.
  • For a thicker soup, add a slurry of cornstarch and water during the final cooking stage.
