Ingredients

For the Strawberry Cake:

  • 1 box white cake mix (15.25 oz)
  • 1 package strawberry gelatin (Jell-O, 3 oz)
  • ¾ cup vegetable oil
  • ½ cup milk
  • 4 large eggs
  • ½ cup mashed fresh strawberries (or frozen, thawed and drained)
  • Optional: 1 tsp vanilla extract
  • Optional: 2–3 drops pink food coloring (for a more vivid color)

For the Strawberry Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup finely chopped or pureed strawberries (drained well)
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Make the Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, combine cake mix and strawberry gelatin powder. Add oil, milk, eggs, vanilla (if using), and mashed strawberries. Beat on medium speed for 2 minutes until smooth. Pour evenly into prepared pans. Bake 25–30 minutes, or until a toothpick comes out clean. Cool completely before frosting.
  2. Make the Strawberry Frosting: Beat cream cheese and butter together until creamy. Gradually add powdered sugar until thick and fluffy. Mix in strawberry puree, vanilla, and salt. Chill slightly if too soft to spread.
  3. Assemble: Place one cake layer on a serving plate. Spread frosting on top. Add second layer, then frost the top and sides. Use a piping bag with a star tip for the decorative swirls.
