Ingredients

Filling:

  • 8 ounces cooked chicken breast, shredded
  • 1 tablespoon olive oil
  • 1 tablespoon red onion, minced
  • 2 ounces white cabbage, shredded
  • 2 ounces carrot, shredded
  • 1 teaspoon soy sauce
  • Kosher salt and black pepper, to taste

Spring Rolls:

  • 15 egg roll wrappers
  • Oil for frying

Instructions

  1. Filling: In a non-stick skillet, heat oil on medium heat. Cook onion, cabbage, and carrot until tender, about 3 minutes. Add chicken, soy sauce, mix, and season to taste. Remove from heat and set aside to cool down.
  2. Spring rolls: Place one wrapper on a cutting board. Add 1 tablespoon of chicken filling on the sheet. Fold the bottom, left, and right sides. Roll to form spring rolls, not too tight. Seal well. Repeat until no wrappers or fillings are left.
  3. Pour about 1/2” of oil in a pan and heat on medium heat until hot. Carefully fry spring rolls, keeping space between them. Cook until golden brown, about 1 minute per side.
  4. Prepare a plate with paper towels. Transfer rolls to absorb excess oil. Repeat until all spring rolls are cooked.
  5. Serve hot with Sriracha Sauce or sweet sour sauce. Enjoy!
