For the pretzels:
- 2 (0.25-ounce) packages active dry yeast
- ½ cup plus 1 teaspoon sugar
- 1 ¾ cups warm water (about 100-110° F)
- 5 cups all-purpose flour, plus more for rolling
- 2 teaspoons kosher salt
- 1 tablespoon vegetable oil, plus more for greasing the bowl
For boiling and topping:
- 9 cups water
- ½ cup baking soda
- Coarse salt, to taste
- ¼ cup melted butter
- Activate the yeast: Combine the yeast, 1 teaspoon of sugar, and warm water. Let rest for 10 minutes.
- Mix the dough: In a stand mixer, combine flour, sugar, salt, oil, and yeast mixture. Mix until smooth.
- Rise the dough: Transfer to a greased bowl, let it double in size for about 1 hour.
- Prepare for boiling: Boil water and baking soda.
- Shape the pretzels: Divide dough, roll into ropes, twist into pretzel shapes.
- Boil the pretzels: Boil each pretzel briefly, then place on baking sheet and sprinkle with salt.
- Bake: Bake until golden brown, around 8-10 minutes.
- Finish: Brush with melted butter and serve warm.
Notes
- For best results, serve the pretzels warm. Leftovers can be reheated in the oven for a few minutes to restore crispiness.
