Ingredients

For the pretzels:

  • 2 (0.25-ounce) packages active dry yeast
  • ½ cup plus 1 teaspoon sugar
  • 1 ¾ cups warm water (about 100-110° F)
  • 5 cups all-purpose flour, plus more for rolling
  • 2 teaspoons kosher salt
  • 1 tablespoon vegetable oil, plus more for greasing the bowl

For boiling and topping:

  • 9 cups water
  • ½ cup baking soda
  • Coarse salt, to taste
  • ¼ cup melted butter

Instructions

  1. Activate the yeast: Combine the yeast, 1 teaspoon of sugar, and warm water. Let rest for 10 minutes.
  2. Mix the dough: In a stand mixer, combine flour, sugar, salt, oil, and yeast mixture. Mix until smooth.
  3. Rise the dough: Transfer to a greased bowl, let it double in size for about 1 hour.
  4. Prepare for boiling: Boil water and baking soda.
  5. Shape the pretzels: Divide dough, roll into ropes, twist into pretzel shapes.
