This Holiday Salad is a festive and flavorful dish perfect for any special occasion. The combination of baby spinach, toasted pecans, dried cranberries, mandarin oranges, goat cheese, and pomegranate arils, all tossed in a tangy Dijon mustard-honey-lime dressing, creates a delightful mix of sweet and savory flavors.

Ingredients

Dressing:

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 1 large lime (juice freshly squeezed)

Salad:

  • 6 oz baby spinach
  • 1 cup pecan halves (toasted, some of them chopped finely)
  • 1/2 cup dried cranberries
  • 3 mandarin oranges (peeled and segmented)
  • 1/3 cup goat cheese (crumbled)
  • 1/3 cup pomegranate arils (or more)

Instructions

  1. Make salad dressing – Combine all salad dressing ingredients in a mason jar. Whisk well with a fork until emulsified. Adjust the taste with more lime juice if desired.
  2. Assembly – Arrange the salad in individual bowls by adding spinach to each bowl and topping with the remaining salad ingredients. Drizzle with the dressing. Alternatively, combine all salad ingredients (except pecans and pomegranate arils) in a large serving bowl, add the dressing, toss to combine, and top with toasted pecans and pomegranate arils.

  • You can customize this salad by adding grilled chicken or shrimp for extra protein.
