  • ½ cup (80g) glazed cherries, halved
  • ½ cup (70g) chopped nuts (optional)

Cake Batter:

  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup (200g) brown sugar
  • ½ cup (100g) white sugar
  • 1 cup (230g) unsalted butter, softened
  • 3 large eggs, at room temperature
  • ½ cup (120ml) milk or buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice or rum (for soaking fruits)

Instructions

  1. Soak the dried fruits and cherries: In orange juice or rum for at least 30 minutes to keep them juicy.
  2. Prepare the loaf pan: Grease and line with parchment paper. Preheat oven to 170°C (340°F).
  3. Combine dry ingredients: Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. Cream butter and sugars: In another bowl, cream butter with brown and white sugar until light and fluffy.
  5. Add wet ingredients: Beat in eggs, vanilla extract, and orange zest.
  6. Alternate dry ingredients and milk: Mix gently until combined.
  7. Fold in fruits and nuts: Drain excess liquid from soaked fruits and fold into the batter.
  8. Bake: Spoon batter into the pan and bake for 55–65 minutes until a skewer comes out clean.
  9. Cool and serve: Let it cool, then transfer to a wire rack. Brush with orange juice or sugar syrup for extra flavor.

Notes

  • You can customize the mixed dried fruits to your preference.
  • For a boozy version, soak the fruits overnight in rum.
