  • 2 teaspoons kosher salt, divided

Other Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 shallot, diced
  • 3 garlic cloves, minced (about 1 tablespoon)
  • 4 cups beef stock
  • 1 cup Cabernet Sauvignon
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon dried Italian seasoning
  • 4 cups chopped red potatoes
  • 3 cups chopped baby carrots
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Beef: Trim and cube the chuck roast.
  2. Coat the Beef: Mix flour, paprika, pepper, and salt. Coat beef in mixture.
  3. Sear the Beef: Brown beef in a Dutch oven.
  4. Sauté the Aromatics: Cook shallots and garlic.
