Ingredients

For the Beef:

  • 2 pounds beef chuck roast, trimmed and cut into 1 to -inch cubes

  • 1 teaspoon paprika
  • 1 teaspoon coarse ground black pepper
  • 2 teaspoons kosher salt, divided
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter

For the Soup:

  • 1 shallot, diced
  • 3 garlic cloves, minced (about 1 tablespoon)
  • 4 cups beef stock
  • 1 cup Cabernet Sauvignon
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon dried Italian seasoning
  • 4 cups chopped red potatoes, bite-size pieces
  • 3 cups chopped baby carrots, bite-size pieces
  • Fresh parsley, for garnish (optional)

Instructions

  1. Prepare the Beef: Trim off any hard fat or silver skin from the chuck roast. Cut into cubes.
  2. Coat the Beef: Combine flour, paprika, pepper, and 1 tsp salt in a bag. Add beef, shake to coat.
  3. Sear the Beef: Brown beef in batches in a Dutch oven.
  4. Sauté the Aromatics: Cook shallots and garlic until fragrant.
  5. Deglaze the Pot: Add wine and scrape up browned bits. Stir in stock, Worcestershire, seasoning, and salt.
  6. Simmer the Beef: Return beef to pot, cover, and simmer.
  7. Add Vegetables: Chop potatoes and carrots, add to pot, simmer until tender.
  8. Taste and Adjust: Adjust seasoning, garnish with parsley. Serve hot.
