Avocado Caprese Toast is a quick, vibrant, and satisfying dish featuring creamy mashed avocado, juicy cherry tomatoes, and fresh mozzarella on toasted bread, finished with basil and a balsamic glaze.

Ingredients

  • 1 ripe avocado, mashed
  • 4 oz fresh mozzarella, sliced or torn
  • 1 cup cherry tomatoes, halved or sliced
  • Fresh basil leaves, to taste
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper, to taste
  • 2 slices of toasted bread (sourdough, baguette, or your choice)

Instructions

  1. Toast the bread slices until golden and crunchy.
  2. Mash the avocado in a small bowl and season with salt and pepper.
  3. Spread the mashed avocado evenly on each toast slice.
  4. Top with fresh mozzarella and cherry tomato pieces.
  5. Add fresh basil leaves and drizzle with olive oil and balsamic glaze.
  6. Sprinkle with additional salt and pepper to taste. Serve immediately.
