This easy one-pot Hamburger Macaroni Soup is a hearty and delicious soup loaded with macaroni, vegetables, ground beef, and tomatoes simmered in a perfectly seasoned broth. A rich and satisfying soup that’s ready to enjoy in just 30 minutes!

Ingredients

For the Soup:

  • 16 ounces ground beef
  • 1 ½ teaspoons garlic salt
  • 1 teaspoon dried basil
  • 2 bay leaves
  • 6 ½ cups beef broth or stock, low sodium
  • 28 ounces diced tomatoes, undrained
  • 6 ounces tomato paste
  • 2 tablespoons low sodium soy sauce
  • 12 ounces frozen mixed vegetables
  • 1 ¾ cups macaroni noodles

Garnish:

  • Chopped parsley, optional garnish
  • Shredded Parmesan cheese

Instructions

  1. Brown the Ground Beef: In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain the grease and season with garlic salt, dried basil, and bay leaves. Stir to combine.
  2. Add Ingredients: Pour in beef broth, diced tomatoes, tomato paste, soy sauce, and mixed vegetables. Bring to a boil.
  3. Cook Macaroni: Add macaroni noodles, reduce heat to a simmer, and cook covered for 10-15 minutes until noodles are al dente.
  4. Finish and Serve: Sprinkle with optional chopped parsley and serve warm.

Notes

  • Storage Information: Leftovers can be refrigerated for up to 3 days. Add extra liquid when reheating if needed.
