This Ground Beef Stroganoff recipe is a creamy, comforting dish featuring tender ground beef, sautéed mushrooms, and a rich, flavorful sauce made with beef broth, heavy cream, and sour cream. Ready in just 35 minutes, it’s perfect for a hearty weeknight dinner served over noodles, rice, or potatoes.

Ingredients

Beef and Vegetables

  • 1 Tbsp olive oil
  • 1 lb lean ground beef
  • 1/2 medium onion, diced
  • 1 lb mushrooms, sliced
  • 2 garlic cloves, minced

Sauce

  • 2 Tbsp all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy whipping cream
  • 1/3 cup sour cream
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp ground black pepper (adjust to taste)

Instructions

  1. Heat Pan and Brown Beef: Preheat a heavy, deep pan over medium-high heat and add olive oil. Add the ground beef, stirring continuously to break it into tiny pieces. Add diced onions and minced garlic and sauté until the onions become translucent and golden brown.
  2. Sauté Mushrooms: Add the sliced mushrooms to the pan and sauté for about 5 minutes or until they soften. Allow any excess moisture released by the mushrooms to evaporate.
  3. Add Flour: Sprinkle the flour over the meat and mushrooms, stirring thoroughly to incorporate and break up any lumps, forming a roux to thicken the sauce.
  4. Add Liquids and Simmer: Pour in the beef broth, heavy whipping cream, Worcestershire sauce, salt, and black pepper. Bring the mixture to a simmer, then lower the heat and continue to simmer gently for about 5 minutes to thicken and meld the flavors.
  5. Finish with Sour Cream: Remove the pan from heat and stir in the sour cream until fully combined. Taste and adjust seasoning if needed. Serve hot over your choice of noodles, rice, or potatoes.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or milk, but the sauce will be less rich.
  • Ensure mushrooms release their moisture fully before adding flour to avoid a soggy sauce.
  • To make this dish gluten-free, replace the all-purpose flour with a gluten-free flour blend or cornstarch slurry.
  • This recipe can be enhanced with a sprinkle of fresh parsley or thyme just before serving.
