Ingredients

Main Marinade:

  • 1 lemon, juiced and zested
  • ¼ cup extra virgin olive oil
  • 3 garlic cloves, finely minced (or 1 tsp dried garlic powder)
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ½ tsp + a pinch of sea salt
  • ¼ tsp coarse black pepper
  • 1 pound thin-sliced chicken breast

Garnish:

  • ¼ cup feta cheese
  • ¼ cup fresh chopped parsley
  • Additional wedges of lemon

Instructions

  1. Make Marinade and Marinate: In a large mixing bowl, combine lemon zest, lemon juice, olive oil, garlic, spices. Set aside ¼ cup of the marinade. Add chicken to the remaining marinade, coat well, cover, and refrigerate for 30 minutes.
  2. Cook Chicken: Heat a skillet over medium-high heat, cook chicken until golden brown on both sides and cooked through.
  3. To Finish: Transfer chicken to a serving plate, drizzle with reserved marinade, and top with parsley and feta. Serve and enjoy!
