Dry Ingredients:
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground ginger
1½ teaspoons pumpkin pie spice
Wet Ingredients:
1 cup salted sweet cream butter, softened
¾ cup light brown sugar, packed
½ cup unsulphured molasses
2 tablespoons unsulphured molasses
1 large egg, room temperature
1½ teaspoons vanilla extract

Instructions
Prepare Dry Ingredients: In a medium mixing bowl, whisk together flour, baking soda, ground ginger, and pumpkin pie spice. Set aside.
Mix Wet Ingredients: Using a stand mixer, beat softened butter. Add brown sugar, molasses, egg, and vanilla; beat until incorporated. Mix in the dry ingredients until combined.
Chill Dough: Cover dough and chill in the refrigerator for 30 minutes.
Roll and Cut: Preheat oven to 350°F. Roll out dough, cut shapes, and place on lined baking sheets.
Bake: Bake for 8 minutes. Let cookies rest on the sheet before transferring to a rack to cool.
